Boiled crawfish are kind of funny. Almost everyone that first looks at them think that they are disgusting. After trying some boiled crawfish, almost everyone loves them! The key to trying boiled crawfish is just to try them. No matter how scary looking they may be to you, you will never understand how delicious they are until you just taste one.
Eating boiled crawfish is almost like going to a football game in Louisiana. As soon as the season arrives, everyone can't wait to go to a boil and eat some boiled crawfish. We may hang around the crawfish boil all day long. We will drink a few adult beverages, play some Cajun music, share a few stories, and eat our boiled crawfish all day long (and sometimes all night long too). If you haven't tried these little mud bugs yet, it's time to give it a go.

"My Favorite Boiled Crawfish Recipe"
Ingredients:
•One sack of live Louisiana crawfish (30-40 lbs.)
•1 box of table salt
•2 cups of liquid crab boil
•25 peeled onions
•5 lbs. of smoked sausage cut into 3" links
•5 lbs. of new potatoes
•10 ears of fresh corn, shucked and cut into halves
Instructions:
•You first need to purge the crawfish. place the crawfish into a large tub. Run water over the crawfish and dump it several times until the water stays clear. Fill the tub with water again and add the box of salt. Stir the crawfish for about 5 minutes, and then empty the water. Rinse the crawfish with fresh water one more time. Now your crawfish are nice and clean.
•In your large crawfish pot (20 gallons or so), fill it half way with water. Add the liquid crab boil. Cover the pot and crank up the heat to the highest setting. Once it reaches a boil, allow it to boil for about 5 minutes.
•Place your metal basket into the pot. Add your potatoes, corn, onions, and sausage to it. Boil this for at least 10 minutes.
•Add the crawfish to the mixture and cook them another 5 minutes.
•If you want the crawfish to be really spicy (the best way), turn the heat off and let the mixture sit in the crawfish pot for a good 20 minutes or so. The longer they soak without the heat, the hotter they will be. You can also add some extra Cajun seasonings.
•Once you get them hot enough, remove the metal basket and pour the mixture onto your table that is covered with newspaper.
•Enjoy your boiled crawfish, and don't forget to suck the heads!
